You asked and now you shall receive! Here is a breakdown of one version of Assyrian breakfast that you can put together. Every Middle Eastern breakfast spread may look slightly different, as there are endless options of ingredients to choose from that can be added to the rotation! I typically like to use whatever I have on hand and make do with what I’ve got!

Think of a Middle Eastern breakfast spread as a giant charcuterie board. The more cheese, spreads, and varieties, the better!

Here is the baseline of what you can add to your breakfast spread:
An assortment of cheese (could be ackawi cheese, feta cheese, or even sliced cheese you get from the deli)
Labneh (plain yogurt works beautifully too!)
Olives
Za’atar and olive oil
Pita bread (or any bread you have on hand)
An assortment of vegetables (cucumbers, tomatoes)
An assortment of fruits
Nuts
Eggs
Black tea

The MOST important ingredient, in my Assyrian-tea-loving opinion is to have the black tea! The lightly sweetened tea makes for a harmonious palette cleanser, as it pairs beautifully with the saltiness of the cheese.
