My dad passed away last year. Finally had my friend's over and did some grilling for them. Made my dad's jalapeno popper recipe that was always a favorite of everyone who had them. They're even better on the smoker but that needs some work before I try to fire it up. Nothing crazy or hard to do but they take time to prep. Big jalapenos cut in half and cleaned, spreadable cream cheese, a french fry sized slice of a good sharp cheddar, wrap it in bacon, and grill it slow till they're crispy (grill hood thermometer consistently read close to 400F, had them in the center of the grill with the 2 outer burners on and the pan was over the center burner which was off, took 30-40 minutes). Also did burgers and hotdogs but these were everyone's favorite. I get why my dad loved cooking for people. It's a good feeling when your friends and family are enjoying the food you make 😸 Looking forward to doing it again and keeping my dad's grilling and smoking legacy going

I started off with shredded cheddar cheese, and small jalepenos, and would cut the bacon super small, this was because of me wanting to make it my own..but this way will remain. I go hard like you do, yuh, the biggest, stuff them up and wrap them full strips of bacon. I like the tray you have, I just use foil, will look into your tray
