as well today today I am joined by the main man the chef himself Chef Michael rason welcome how are you doing I’m fine the pleasure is all mine to having me on your show listen to me now I’m excited because tell them Chef tell them what we will be making today well today we will be making chicken breast stuff with alfredo mushrooms and garlic parmesan broccoli all the things that I wanted to eat today how did you know probably read mine you probably do so tell me what I will be helping you with today okay first we could start to put water to hot to blanch the broccoli okay I could do that I just I don’t do lighting of the soap so you could light I will fill up the water for you and to blanch is very simple right M yeah just um hot water and you add a little salt to it so the broccoli doesn’t lose color it keeps the color okay yeah and why are we doing this Chef to precook the broccoli before we stir fry it okay what else can I do to help you well cut up the broccoli yeah you can cut the broccoli if you’d like okay while you’re doing that I’ll wash the mushrooms yum I love mushrooms mushrooms are my favorite favorite ingredient and speaking of ingredients what’s your favorite ingredients cheuse mine has happens to be my shadow Bunny and my garlic but what about local Cuisine it know it has a nice flavor but I also like my mixes I had my I have my own mixes here with Italian herbs and spices garlic herbs and spices parsley parmesan cheese local cheese local cheddar oo mixed with Parmesan cheese as well oh yum now this happens to be my favorite favorite I love broccoli M it’s so delicious I love broccoli and one of the things I love about it is you can just literally eat it with a little bit of blanch and you don’t have to cook it you know so Chef you were telling me earlier this is your first cooking show well yeah OMG have you ever thought of going on on something like um those Iron Chef anything like that has ever cross your mind sure yeah yeah like I just watch cooking shows on TV every day like Beat Bobby Flair and all those things head kitchen all those things yeah so but I also have training and experience from executive chef Natalia Lee yeah there one of the persons who teach me wow that is fantastic I mean you did mention it 18 years of experience that you have under your belt in those 18 years of cooking name one of those outstanding meals you prepared this meal whether it was for a banquet whatever was me prime minister you prepare this meal see if you can go back in time now capture that we have a we have yeah well I used to work on um the ocean pear height Side Restaurant that was the ship down shagas oh okay and I did something for a few of the ministers at that point in time it was um a function I think it was Julia Caesar’s love boo yeah and I did a dish called the pearls of the ocean with scallop strims butterf Fred cassava and pumpkin funu extremely delicious okay so what do you want me to do with the mushroom cuz for me I cut off the the bottom of it so what do you want me to yeah right get right so I remove the the mushroom like that the whole thing yeah so just cut off the bottom part there or just like how you do it and I can slice it just like how I slice this yeah yay simple just like that okay that’s all to do for the for the mushrooms yeah mhm I can do that and you’re going to wash that chicken breast yeah it’s already washed I love this where do you see yourself going now I mean 18 years already have you thought of maybe doing your own restaurant well in the next say in the next 2 to 3 years I want to open Moon restaurant but I want it to be classical okay when you when you say classical what do you mean it must have different styles of foods and different sections of the restaurant it just must be one style of food so you know anything you think of you could come come to mind of eating yeah you should say hey let me go down to Mike’s restaurant and that’s why you’ll call it Mike’s restaurant I like it I like it already you really know what you you’re about Chef Ramon oh my goodness I just have the love in my heart for cooking and anything that I cook it seems to everybody say it seems to be very tasty and you know delicious so I think that’s enough mushroom oh it is I’m now going to say you know what I love about mushrooms I love that they absorb the flavor in any any any anything any any dish it’s just so and it always smells so ity is that weird that I like how it smells yeah but we’re going to change the taste and smell of it okay while it’s cooking all right okay so the first thing we’re going to do is light the stove okay right right nice right and ol oil preheat no I’ll use reg regular oil okay let me just rinse my hands sure so I’m just adding a little little touch of oil to kind of sort the mushrooms first right mhm so the pan has to be properly well heated yes my friend I’m loving it so we got the mushrooms and we got the broccoli and I don’t need to do anything broke I don’t need to cut it up in anyway no not really you can cut it a little smaller okay in half yeah okay I will do that for you right in meanwhile I’ll sort the mushrooms very healthy perfect CU not like a professional I am oh my goodness guys after this I think I’m going to be I’m going to be a chef after this you know I feel this Tappen into my he like that’s enough no so of all the um persons you’ve cooked for maybe celebrity wise like what celebrity would you love to cook for and it could be local it could be International Regional but what celebrity would I like to cook for or or public figure it doesn’t necessarily have to be the celebrity I like to cook for is not in Trinidad that’s okay but I like to cook for Rihanna and deonce and see the expression on the their face after tasting my Exquisite food wow yeah but you know someday someday somehow could Poss Happ Beyonce Rihanna when you’re viewing this you already know Chef Ramon is ready to cook an amazing meal for you as he uh goes into saut the mushroom the mushrooms all right love it love it love it right so it this will take a little while okay so while that taking a little while mhm I’m going to butterfly the chicken breast butterfly chicken breast let me see how you do this should I pass that to you thank you very much and do you need this knife yeah that one will be fine should I wipe it for you there you go Chef butterfly the chicken yeah so you do it from this side inside mhm yeah I’m not really butterflying it I’m just making an inser right into the meat make sure not to cut straight through right yeah that’s perfectly fine right okay and I just stick the knife and tap on it like that why you doing that to even it out okay and the meat breastes are kind of meat it not as moist as tie and leg and in the chicken so you have to make sure that you need stays together it easily tears okay can I turn this for you sure no problem let wash my hands when I heard we were making this today I was like what it’s one of my favorite meals you know I want the mushrooms to kind of stiff right it brings out the flavor of the mushroom right so this I can’t do that I can’t do that I can’t do that I can’t do that practice makes perfect if you practice makes perfect yeah you want me to try yeah you could try I believe in it you believe believe in me yeah watch it’s just right a flicker virus you just nothing SP not not at all just simple like this watch my hair you’re P it too high so do a little softer yeah right ready mhm oh sh don’t bother about it that’s fine that’s fine that’s fine don’t bother about it don’t nobody saw that nobody saw that so now going to add some full cream milk not too much because they way too wet not too wet just a little little a little little yeah well I’ve never done this before so this is all new to me right and then we’re going to add a little bit of heavy cream heavy cream well cooking cream as they say cooking cream not too much not too much should I add some salt and black pepper to this sure I’m coming to that yay all right so we going to add a little bit of salt not too much because parmesan cheese and cheese already has salt in Sal so you don’t want to overpower it with salt no you want to taste the natural flavors right and then we’re going to add a little black pepper not much a little something yeah just a little bit it brings out a different flavor the peppercorns okay right love that then we’re going to add a little bit of my Italian herb mix where I made for myself okay you made this for yourself are you going to let us know what is the secret to your herb mix it has basil oregano parsley pepper flakes a little bit of um Rosemary added to it real nice things some garlic powder with some garlic powder yeah right so we’re going to add a little bit of this because we don’t want to overpower the flavor of can put some sure no problem that’s what I want that’s why I wanted to add it a little finess now you know what I mean so while that’s cooking we’re going to season the chicken breast chicken okay sure right yes so I placed in the bowl I also have a garlic herb mix I made with oregano basil paprika and a few other secret spices a few other Secrets right we Reve all at the same time do you want to do the I just want to do a little one right I feel like I’m getting it on my shirt but that’s all right that’s okay right so we just add a little of this after that we just add a little salt salt and black pepper no I ain’t added no black pepper already have black pepper in the um I hope I little salt it all already have black pepper in the mushrooms okay so right now the mushrooms are almost ready to add the parmesan cheese and the regular local cheese so go ahead and add it yeah you can all of this not all you add some and you have to mix it in okay so I have the stirred while I add it keep the stove low low low very DJ Low all right it has to be thick thick and not too runny because you don’t want it to run out of the chicken breast when you put it in the oven right okay okay you’re better you’re better than me me never how you could say that no I know trying I thing I like how that is Mama gu I like how your mama being honest with you LOL yeah well you’re better than some of the people I work with her oh dear all right good well I know I could get a job in a in a in a kitchen I get through right and this is there no that’s good turn off okay yeah and that can just sit right there for a little while all right right yes okay so now I’m going to blanch the broccoli place to keep the color of the broccoli okay the salt helps with the color yeah true yeah okay didn’t know that so after you put it in the hot water do you put in cold water too yes to cool cool it immediately should I get some cold water for you sure no problem okay or we could just use the pipe okay sure yeah right you want to add it yes so just add it then you take it back out one time 30 seconds 30 30 to 40 seconds and time begins now um take it back out one time oh should I mix it up a little bit not really could just leave it floating around all right there we go right yeah 30 seconds so let me take it out oh yeah oh yeah see how the salt has the color of the broccoli mhm keeps the color fresh oh delicious mhm and nutritious and it smells great yes it does so while you’re cooling that I’m going to add some paprika oil paprika oil yeah oh did you make that yourself Chef yes I did my goodness right so this is adding to the chicken breast with the garlic herbs and salt mhm not too much just a little bit cuz I don’t want to give it a too dark color just a light texture you’re looking for right right and now I’m going to season the chicken breast should I leave it soaking in water or no strain it all right nice so I’m putting this over here mhm so while that’s there I’ll be seasoning the chicken breast yeah got to make sure everything mixes in evenly so now I’m going to put the chicken breast into should we put oil in that um really the chicken breast is already have already has paprika oil in it okay yeah you know you had to be heal concious at the same time you don’t want to eat too much oil and so we put in the chicken breast in there mhm and then well you’ll show them all the steps right so now I’m going to place the chicken breast right course thank you for coming on Sizzle and spice you’re welcome any all right let’s get back to the show so you said you needed to sauté the broccoli and stuff the chicken right so should I help you do that we’re going to put this mushroom with alfredo into the chicken breast oh but it don’t move so yeah because because it gets a little cool no not to get cool I want to thick like that so it wouldn’t run out of the chicken breast yeah right oh it looks so good if you make it too thin it’s going to flow right out when you put it in the oven right right right right oh yes right oh yes how do you find it looks there I think it looks amazing it looks amazing so let me let me wash this for you to to organize the broccoli up I’m already ready with your pot right so I’ll just slide back the stove meanwhile okay and a Lo it right let’s do this and so now while the frying pan is hutting right all right I’m going to fold the chicken breast gently gentle fold just like that just like that right simple I said so what you to do with this oil going to add a little piece of margarine this one yeah it’s a little Cube yeah just a piece yeah right I do right right so now not too much you want just a little it very very simple this dish is very easy to make yes it is very healthy and it tastes delicious and it’s very nutritious as well yep you know broccol is great that’s enough yeah I think that’s enough there so I’m going to add some of my Italian mix now Italian mix into the pot yeah not too much because I don’t want to overpower The Taste and the flavor of the BR yeah so we’re adding that in here yeah okay you can add it when you’re ready and if you wanted to toss it it’s you could toss it you could can I I made a mess with the with the with the mushrooms so you should definitely do it sure yay niceness I can’t wait to eat it’s so healthy so you just you don’t want to overcook the broccoli either so is just a slight turn right normally I would cook this in a Chinese walk because be able to toast it right B do do a little something for them now o once the broccoli consumes enough heat there mhm we’re almost done we’re almost done yeah we have to put cheese in there yeah true okay let’s do that I didn’t know what cheese was going in there let’s put the chicken in the let me let me see if I could help you with that sure shall I put in the chicken guys guys we’re about to put in this delicious chicken let’s go in we go I turn it on yeah to 350 set all right guys so we taken a quick break and when we come back it is time to eat I did it did it ah look you to take it out chef wo oh my gosh you li that’s what we going to eat now oh my gosh I’m so excited so what else what do I have to do to help you okay well the broccoli is already cooked yes we just had to add the parmesan cheese T now okay because we was waiting on the chicken breast I didn’t want to open cook the broccoli correct so I’ll just light it back okay so we’re not really adding too much Parmesan Parmesan cheese to the broccoli while it is cooking okay so I’m just going to add a little bit for flavor because parmesan cheese has plenty it’s salty yes it is and it’s yummy right so it’s just a little toss like this a little toss like that a yeah yeah oh my goodness now I listen Chef because now you have me thinking about switching up careers you know I mean eating healthy every day sounds great um Chef if you were not doing this if you were not cooking every day for the past 18 years making people happy making their bellies very yummy um what would you what would you have been doing SSE in the world really yeah a traveler yeah professional traveler would profal traveler yeah along with my family a oh beautiful yeah right so I’m going to Plate the broccoli yes please sir so that I can jump in that broccoli hey hey get my food on hey hey I’m just I be so excited about food yeah I also like to garnish my plates a little bit you know because and what are we garnishing with today parsley oil and paprika oil paprika oil and parsley oil oh look how pretty that looks something about the presentation on the plating for me it really sells the dish you know what I mean and this is the parsley oil parsley oil mhm oh yummy could also add a little bit to the broccoli to give it a nice flavor nice a nice fresh right so now we’re going to slice the chicken breast stuff with alfredo mushrooms M right so M hello friend to my stomach mhm right okay oh yeah just a second okay okay yes yes yes mhm oh my oh my my my so juicy oh let me get the FKS ready to eat we ready to eat and there you have it sprinkle it up oh there you go as your your Cutler okay H let’s remove this yes please and let’s eat I have to wait on you cuz it’s good manners sure no problem the broccoli I love the broccoli it’s nice and crispy remember we didn’t overcook it mhm and all the the paprika sauce I think is what I’m enjoying that little Kake mhm see how I scraping up all my
