– Chicken Thighs/legs – 2 – 3 lbs (you can use chicken breast too) – Garlic – Mirepoix (Carrots, Celery, Onions at an equal ratio) – Wide Egg Noodles (Fusili pasta as a sub) – Better than Bouillon – Lemon (for the lemon juice) – White Wine – Bay Leaf – Parsley – Salt/Pepper – Dried Oregano – Red dried chili flakes – Olive oil
Cooking Instructions:
Salt and pepper your chicken and preheat pot/slow cooker. Drizzle olive oil and add your chickens. Cook for 6-8 minutes on medium high heat till the skin turns a light/golden brown.
Prepare your mirepoix (dice onion, chop celery, carrots) and add that after you finish browning the chicken skin. Don't overcook the chicken as you will cook it again in a slow cooker/pot. Dice up and add your garlic next. Season the mirepoix with salt/pepper, dried oregano, red dried chili flakes, and add a teaspoon or two of 'Better than Bouillon" and stir everything. Add 1/2 to 3/4 of a cup/splash of white wine like a boss!
Toss your chickens back in the pot with a bay leaf. Add about 3 cups of water and let everything cook for 5 – 8 minutes on high heat. Remove your chicken and shred it separately in a bowl.
Add your egg noodles now, stir them in. Add your shredded chicken back in and finish cooking for another 3-5 minutes as the noodles finish cooking. Don't forget a squeeze of an lemon to finish it off.
Bowl up your soup and garnish with parsley and enjoy.
