So I watched tons of video on the KJ before buying one, a lot of tips and beginner information. It seemed like every video I watched on smoking; they set the bottom vent about 2 fingers and the top vent at the second line to maintain around 225. These are my vent settings you maintain 250. I haven’t don’t a smoke at 225 yet but I’m wondering why I have my vents need to be so closed or if this is normal? I hope when I do end up smoking at 225 I can without choking out the fire. I do use the kickash basket and ash pan instead of the stock charcoal grate. Maybe that lets more air flow in?

    My big green egg is very similar. For 225 I basically do a pinky width for both top and bottom vents. Never once have I had fuel choke out.

    For low temp long smokes it’s also a good idea to only light your coals in one area. Basically only light the coals in one area instead of 2 or 3.

    You should also watch your temp super close during the initial warming stage. Once your done temp is almost to your desired temp, choke it way down and be suuuper patient until your comfortable the temp is holding. I give myself a solid hour to get the temp dialed in before the food goes on. Don’t ever over shoot your desired temp, these are a pain to bring back down.
