So, I was struggling with sourdough like— started a starter twice and it flopped and my first loaf turned out incredibly dense and doughy. Then I found this minimal touch recipe on Pinterest and got a starter from a friend (no shame in my game) and it’s been great ever since!! Every loaf turns out damn near perfect even if my timing is a little off!
For starter: I do 1:3:3 ratio on it 20g starter 60g filtered water and 60g King Arthur unbleached bread flour. Take starter out of the fridge the night before, let come up to room temp and feed.
Then I use this recipe that I linked- granted- it’s an all day sucker so pick the weekend or whatever full day you have but I have yet to have this recipe yield anything less than perfection! And it has absolutely nothing to do with me bc I’m a bread newbie. I also cook it in this vintage ceramic Dutch oven I got from goodwill! Who needs LeCreuset (me I desperately want one in matte black 7.5 qt please please please)

Wow, it’s amazing how a good recipe can make even the biggest “idiot” feel like a pro in the kitchen! Your dedication to perfecting your sourdough technique paid off big time. And using a vintage ceramic Dutch oven from Goodwill is such a cool touch – who needs fancy expensive cookware, right? Keep up the great work, bread newbie turned bread master!

“Idiot Proof” is a great name for a guide to working with all manner of yeasted doughs.
