hi and welcome to cooking frog today we’re cooking up a tasty chicken picata you’re going to love it so let’s get started using a sharp knife carefully slice each chicken breast in half horizontally to create thinner even pieces this helps them cook more quickly and evenly lightly beat the chicken pieces with a meat mallet until they are even in thickness this ensures they cook uniformly and stay tender and here’s what we’re aiming for nice even chicken pieces that will cook perfectly and taste amazing to create the dredging mixture combine 1/4 cup of flour 1/4 cup of grated Parmesan cheese one teaspoon of salt and half a teaspoon of black pepper in a bowl mix these together until well Blended this mixture will give your chicken a delicious crispy [Music] coating for the coating step dip each chicken piece into your dredging mixture making sure both sides are evenly coated gently shake off any excess flour to keep the coating light and even this will help a achieve that delightful crispiness once [Music] cooked heat your pan over medium high heat and add 1 tbsp of olive oil along with 1 tbsp of [Music] butter once the butter is melted and your pan is hot add the chicken breasts cook them for 3 4 minutes each side or until each piece has developed a golden brown crust this will ensure your chicken is not only flavorful but also beautifully crispy on the [Music] outside now for the fun part preparing the picata sauce in the same pan you Ed for the chicken add half a cup of white wine and four minced garlic cloves let it simmer for 3 to 4 minutes or until the wine has reduced by half next add one cup of chicken broth the juice from one lemon 2 to 3 tablespo of [Music] Capers and a few lemon slices to the pan stir in 2 tblspoon of butter and sprinkle some Rosemary over the top [Music] let this simmer until the sauce thickens slightly and the flavors melt now return the cooked chicken pieces to the pan spoon the sauce generously over each piece ensuring they are well coated let the chicken simmer in the sauce for 1 to 2 minutes to ensure it’s thoroughly warmed through this step allows the chicken to soak up all those delicious flavors making each bite even more irresistible once the chicken has simmered in the sauce transfer the pieces to serving plates spoon some of the extra sauce over the chicken to enhance the flavor finish by garnishing with freshly chopped parsley for a fresh touch serve immediately and enjoy the delicious taste of your homemade chicken picata for more delicious recipes be sure to visit us at cooking frog.com and don’t forget to subscribe here on YouTube for more tasty Adventures thanks for watching [Music]
