    Eat it and do better next time. Throwing it out while it’s still edible, just not perfect, is wasteful on a level my conscience and budget don’t jive with.

    You need the top of the thermo to be in the middle of the thickest section of the meat in order to get an accurate reading. Looks like you’re bad at using a thermometer.
