  1. Meatballs:
    1 1/2 lbs ground turkey
    1/4 cup breadcrumbs (I grind my favorite gluten-free crackers)
    1/2 tsp red pepper flakes
    1 tsp dried oregano
    2 tsp paprika
    2 tsp salt, pepper to taste
    1 tbsp fresh mint, minced
    1 tbsp fresh dill, minced
    1 tbsp parsley, minced
    2 eggs
    1/2 cup onion, grated
    1 lemon (juice of whole lemon, plus zest)
    2-4 garlic cloves, minced

    Combine everything in a bowl, scoop onto a baking sheet, roll, and bake at 375° for @ ten mins depending on your meatball size.

    Tzatziki:
    1 cup of Greek yogurt (or dairy-free yogurt)
    1/2 cup cucumber, grated (squeeze out liquid)
    1 tbsp fresh dill, minced
    1 garlic clove, minced
    Lemon juice from half of a lemon
    1 tbsp olive oil
    Sea salt to taste

    Add everything to a bowl and mix.

    Herb, feta dressing:
    3/4 cup olive oil
    1 lemon, juice only
    1 garlic clove, minced
    1 tbsp vinegar (any kind)
    1 tsp fresh parsley
    1 tsp fresh dill
    1/2 tsp fresh mint
    2 tbsp chopped olives
    2 tbsp chopped pepperoncini
    1/4 cup feta

    Add everything to a mason jar or container with a lid and shake.
