Recipe:
– 17,64 oz/500g flour, for best results look for flour with more than 11g of protein per 100g
– 1-1,5 teaspoon salt
– A third of a teaspoon dry yeast, make sure your package hasn`t been sitting open for too long, it can affect the rising, use new package!
– 12,68 fluid oz/375ml room temperature water

!!! Important. In the video it says 16,06 oz/475 ml water, it`s a mistake! The correct amount is12,68 oz/375 ml water.

Try to be precise with the ingredients measurements, I`ve done this a lot of times and this works best! Mix the flour and the salt in a large bowl and add the yeast and then the water. Mix with a wooden spoon, not too much, just until combined and soft. It may look dry at first, but as you mixing it it will be perfect. Let it rest for 10-12 hours at room temperature(at home is about 72F/22C), I usually do that before going to bed, so I can bake it in the morning/midday.
After the 10-12 hours rising, preheat your oven to 464F/240C and for best results place a tray with water on the bottom of the oven. Dust your working surface with flour and carefully take out the dough with a scraper or a spatula on your working surface(you can use a large cutting board , a tray or your kitchen table) Dust the dough with flour and divide it in 2 equal parts with a scraper or a large knife(works best). Just cut the dough, don`t press it or roll it with your hands. Get a large tray, put baking paper in, dust with a little flour and gently lift the 2 pieces of dough and place them in the tray. Don`t squeeze them, just put your fingers underneath and gently lift it. If the pieces a bit short, gently stretch them to the desired length.
Bake in a preheated oven, fan on 464F/240C for 15 minutes, then turn the baguettes upside down and bake for 10 more minutes. Flip them again and bake for 5 more minutes or your desired crust color. Total cooking time 30 minutes. When ready, let the baguettes cool down on a rack or a cutting board, before cutting. Enjoy!

  2. 😂😂😂that kid was awesome! Must love having you as a parent if only for the food. Do you know what they used to use in the olden days for yeast? I've never made bread but was it warm water? Yeast freaks me out as when I was a kid, I got sick and mum had to take me to work. She was a home science cooking teacher. The kids were making something with yeast and there was a pile of it on the bench. I thought it was something tasty so scooped up the pile of sugar looking stuff and shoved it in my mouth, I 🤮🤮🤮 everywhere as it was disgusting tasting yeast. 😂
