It smelled so good my husband didn't even wait for me to take a picture before digging in! At least I can show the texture.

I saw this recipe from my (adoptive) great-grandmother in our family cookbook and wanted to give it a shot. It was sooooo good. A dense cake that's nice and chewy near the top.

I made in an 8×8 aluminum pan and I think I'm going to use glass next time to prevent the topping from sticking. I was in a hurry and grabbed the first 8" pan I found 😅

    Written instructions:

    1 c. pastry flour

    6 tbsp. milk

    1/2 tsp. baking soda

    1/2 tsp. vanilla

    3 tbsp. butter

    1/4 tsp. salt

    2/3 c. sugar

    2 1/4 tsp. cocoa

    2/3 c. packed brown sugar

    2 tbsp. water

    6 tbsp. shortening

    3/4 c. coconut

    1 egg, well beaten

    Preheat oven to 350°F.

    Sift, then measure the pastry flour and put it in a small bowl. Add the baking soda, salt, sugar and cocoa.

    Cream the shortening until soft; add the beaten egg, milk and vanilla. Sift the dry ingredients (again) over the shortening mixture and stir until all is blended and smooth, about 2 minutes.

    In an 8 inch baking cake pan, melt the butter. Add the brown sugar and water. Stir until well blended and sugar is dissolved. Add the coconut.

    This will be the “icing” part of the cake.

    Pour the batter into the pan over top the butter/brown sugar/coconut mixture.

    Transfer to the oven and bake at 350 degrees F for 50 minutes.

    Turn upside down onto a serving platter as soon as it’s done baking and you’ve removed it from the oven.
