I’ve been trying to find a bagel recipe that I love for months, and this one (https://ladyoftheladle.com/bread/how-to-make-small-batch-overnight-bagels/) really does it for me. I’ve made this small batch recipe 2x now, and make 5 instead of 4 bagels to make them mini.

This is my first time shaping them this well, as the hole usually closes up! I’m pretty proud! Next I want to try to make a cinnamon bagel, and I’m doing some research on how best to do that (advice welcome).

    You can tell they were boiled for the perfect amount of time from the sheen and shape. Love some beautiful, hot and shiny bagels! Great job 👏 !
