Got a fire under me yesterday to make some sauces. From left to right (hottest to “mildest”). Peaches n’ sCream: Smoke Show edition, 6 bottle batch consisting of a peach base with spices and 17 chocolate Scorpion peppers and a generous helping of liquid smoke (haven’t gotten around to smoking any of my peppers yet). The peach/brown sugar base gives it an amazing sweet flavor that goes perfectly with the deep rich flavor and heat of the chocolate Scorpions. The next one is Mango Fuego, 6 bottle batch consisting of a Mango and vinegar base, 20 yellow scotch bonnets and 5 Carolina reapers. Again the fruit makes it nice and sweet upfront and then your hit with the stingy aggressive heat of the scotch bonnet followed by the deep heat of the Carolina reaper. The last is Peach Lemonade. 12 bottle batch consisting of the Same peach base as the first but this time no liquid smoke and 50 Lemon drop peppers. This one I strained, I don’t normally but it has so many seeds after processing that it wasn’t pleasant to use.

This cool. I too would like to make some sauce but I know I don’t have the attention span to actually do it. Congrats to you!!!!

Would love to get back into making my own sauces, but sourcing chilies here is rough and I’m a total arsenic finger about growing my own.
