my grandma (1920-2013) wasn't the best cook but her pickled beets recipe was highly sought after. in fact i may end up doxxing myself by posting it…

the recipe is written out below. i edited it a bit so that the formatting works (and the edits are similar to how she wrote earlier recipe cards):


Slice following very, very thin:

  • 1 can beets, sliced/whole/chunked, or 1 lb. fresh. Don't drain after opening can. Keep liquid after boiling fresh beets.
  • 1 med. onlons.

Alternate layers in a mayo jar.

Mix following Ingred. togeth & heat to boiling:

  • ½ to ¾ Cup beet juice
  • ½ to ¾ Cup vinegar
  • 4 to 5 tbl. sugar
  • 1 teas. salt
  • 4 peppercorns
  • 1 bay leaf
  • 4 whole cloves

Now pour it over the bts & onions in jar.

Let stand in ice-box overnite (or at least 8 hrs.).

    My grandma did these but with eggs instead of onions. I may have to do this, this sounds so good now and it’s been at least 5 years since she passed and I’ve had these. Thanks!
