I’ve been trying to hold off on opening ATP shipments early and letting these things mature a bit. But me being me I opened one anyway. And I’m happy to report on not getting any guilt trip after trying this one.
Will this thing improve with time? Ridge being Ridge, of course it will. But it’s so good now!
Really interesting how this evolves over the evening.
On open, light, crisp, bright, concentrated, with bramble and raspberry. Awesome acidity and fine tannins.
After about an hour of air and at a little chill, it evolved to a more dense, meaty, fresh peppery nose with licorice and leather. The palate gets darker, denser, earthier, with plum, dark chocolate, thyme. Long finish. Just awesome.
With strip steak from Paisanos with pan sauce, unbelievably vibrant spinach (healthy) and potatoes.
