Of course, with our daughter home, it definitely challenges us to get her, and our veggie preppers, some vegetarian dishes.
This week, these recipes are super simple… three of which are one skillet meals that can easily be bulked up for company!

– Sun-Dried Tomato Chicken Sausage Orzo
– BBQ Chicken & Sweet Potato Bowls (GF)
– Asian Ground Turkey & Green Beans (GF)
– Almond Miso Chickpea & Butternut Squash (GF)(VG)

Sun-Dried Tomato Chicken Sausage Orzo… A simple one large skillet dish perfect for company… and can easily be made with OR without meat. Saute up some artichoke hearts, sun-dried tomatoes with a bunch of spinach & garlic… and then, we added some sauteed spinach & feta chicken sausage. We added capers and feta for garnish and served it up with steamed broccoli.

BBQ Chicken & Sweet Potato Bowls (GF)… An excellent meal for company! As you roast up some sweet potatoes, rub the chicken with spices and saute with your favorite BBQ sauce. We used Primal Kitchen’s Hawaiian BBQ which is sweeten with pineapple juice. VERY delicious. Garnished with pickled onions, cilantro, avocado, and dill pickle slices… and ya have to serve it up with slaw! We made some Greek Yogurt Power Slaw! YUM!

Asian Ground Turkey & Green Beans (GF)… An easy protein and veggie one skillet meal that can be bulked up for more servings. A nice sweet & spicy Asian flavored ground turkey with sauteed green beans.

Almond Miso Chickpea & Butternut Squash (GF)(VG)… An easy one skillet dish with sauteed zucchini, butternut squash, and chickpeas with an amazing tangy almond & miso dressing. Serve it over some brown rice!

[Music] [Music] Molly Moose she says I’m ready for my closeup hey meil Preppers all coming at you today that’s my Molly Moo um a foster fail that very successful I think in our parts we love her very dearly Amy behind the camera and we have got again four dishes for you this week um actually these were a lot easier than last week yeah um a lot of these just I think um pretty much one Skillet dishes uh except for right here we got a little bit obviously we got a bowl here we’re going to put together uh let me start over here we have got a sundried tomato orzo and spinach with uh with chicken sausage a lot of stuff in here we got chicken sausage there’s artichokes in here as well this is pretty much a one Skillet dish you got to cook the orzo first and then you put it all together um and then we just kind of garnished it with some Capers and feta it so hopefully you don’t need one on the back oh okay so hopefully you don’t need any salt on this uh with some steamed broccoli I was going to put the broccoli in it we um but it looks so pretty we forgot outside of that so but yeah just put it all in there um this is actually U yeah really easy to make it was I can’t remember what else going to say there uh a little brain fart that’s okay yeah it’s all right um coming over here we’ve got a barbecue and sweet potato bowl right here so obviously we got all this together we’ve got some barbecue chicken which we did a little rub with with um we did garlic and onion powder salt and pepper a little papaa just rub that in there let it sit for a little bit and then we um Skillet fried that with Primal Kitchen Hawaiian barbecue sauce that’s right it’s really tasty and with great thing about primal’s kitchen it is low sugar but I think this one has like real sugar in it no artificial no artificial refined sugars so a lot of barbecue sauce has a lot of brown sugar and it’ll just added sugar syrup and stuff like that cuz that’s what makes a barbecue sauce but this one’s pineapple juice so it’s quite tasty and then right here we got some roasted sweet potato we made a power here with a Greek yogurt dressing a little bit of Dijon in there we’ve got pickles I got some pickled onions a little garnish with cilantro and green onion avocado guys put all that together obviously we’re going to heat these up we’re going to do this at home so we can heat those up and then we can add all that lovely stuff on top yeah hard to take just got a little little afternoon of some barbecue U over here man this made a little a little we need to didn’t make a lot but bulk this one up but this is an Asian turkey with green beans in it and um Amy made this one anything it just super easy you cut the green beans up and then just kind of sauté them in the pan with a tiny bit of oil till they start to char then set them aside and then Brown your onions garlic and turkey add the green beans back in and then this lovely sauce you’ve whipped up um Asian sauce with h garlic chili paste and that’s right yeah C oi um yeah I had a/4 cup of tamari in there yeah and honey and Tamari and just dump it over allim until it thck up yeah so sweet and little spicy sauce in there red pepper flakes got some red pepper flakes in there yeah um but man only three dishes it’s only a pound of ground of ground turkey so usually we spread that out until four but this is good this is good typically if you’ve got a side dish this is your entree then You’ be able to make four plates out of it but we did and then over here uh chickpea and butternut squash with an almond miso dressing and this dressing is pretty phenomenal it’s the something like that and then you’ve got to buy some miso paste which comes in a big little big it’s more than you need so it’s big but it’s in a small little tub uh but you can make some miso soup with it uh we only use a teaspoon and it’s actually pretty salty got the Miso taste to it uh mix it with almond butter and and rice vinegar it makes a amazing dressing to put over this this is saut zucchini with with butternut squash chickpeas garnished with some green onion and um some slivered almonds did I say mushroom it’s got a little bit of mushroom in there too so and then over some brown rice this is a double bats for my daughter and then I we got a little plate for me a little plate for Amy and so that’s our vegetarian dish for the week yep and then everything else and the orzo dish actually the recipe we based it on didn’t have meat in it but we decided to add the spinach and feta chicken sausage but you could easily make that without yep and make it a vegetarian dish totally totally um so guys man great I love I love all these colors too this came out pretty nice yeah all these great Colors oh my cinematography is all
