We will open this wine for Mother’s Day next weekend, but my wife thinks fried chicken is “lazy”, so I would appreciate your help recommending a more “elaborate” dish to go with this sparkling wine.
It’s a 75% Pinot Noir, 25% Chardonnay, 2011 vintage, and spent 10 years in contact with lees.

    I would be looking at some nice shellfish, whatever you can find fresh will work beautifully

    If you can find a truffled mousse, some caviar, and some creme fraiche, they make nice little bites on blinis. If you skip the caviar, very crispy potato chips work great as well.

    Maybe some shellfish pasta with a light sauce as well, a million possibilities.

    Champagne is way versatile, every new years I make scallops w burre blanc and crack some good champagne and its a great pairing. Bonus baller move – mix 1oz of caviar into the sauce right before you plate

    I can think of very little that *doesn’t* pair well with champers. Make whatever you’re good at making to ensure a pleasant experience: I’m sure the wine will pair perfectly.

  5. Shellfish!

    Oysters (kumamoto or kusshi if you can find them) – shuck em, down em and have a sip of the bubbles.

    Seared scallops under a beurre blanc sauce.

    Lobster – I like it simple with drawn butter, but thermidor makes for a show.

    Shrimp – quick grill or scampi if you want.
