My best one yet – pepperoni, sausage and cheese

    I’ve been making pizzas at home for about three years. The first year and a half was with a dough premix and a home oven. Just in the last year I finally bought a pizza oven and started the journey of making my own dough.

    I use the ‘Easiest Pizza Recipe You’ll Ever Make’ recipe on King Arthur’s web site. I like it because it’s great same day and even better at 24 and 48 hours.

    I’ve tried a lot of different cheeses and pepperoni brands and finally hit the jackpot this week. I went to Smart & Final. Their ‘First Street’ cheese is better than my local store and even better than Costco. Very nice mozzarella at a reasonable bulk price. I think it was 12 bucks for 5 pounds.

    The real score was their pepperoni. 16 bucks for three pounds but it’s my favorite yet. I’ve tried Battistoni and Hormel cupping pepperoni and some store brands. It’s sliced very thin and it’s lean so it crisps up well and does not leave a pool of grease inside the cup or all over the center of the pie.

    The dough is an all purpose from First Street. I think my next bag will be their bread flour.

    This pie so good. I made sure to pat down the sausage to remove the excess grease and it made a real difference. Bottom crust was perfect. I used a little too much flour which you can see on the right side of the crust. I’m still perfecting the too much/too little line we all deal with.
