if you make one salad this week it has to be my quinoa feta and chickpea salad eating enough veggies can be hard but I find when I meal prep a big salad at the beginning of the week it makes it so much more likely I actually eat them this one’s packed with nourishing ingredients like fresh herbs and chickpeas and for a super easy dressing we just use some lemon juice and olive oil and then we just top it off with some feta this is truly the perfect spring salad I know you’re going to love it
