Detailed recipe below. We are cooking family dinner with our toddler and then we sit down to eat and have some amusing dinner conversations!
Honey Mustard Chicken Dinner Recipe
Chicken Ingredients:
-4 bone-in skin-on chicken thighs
-1 tbsp olive oil
-⅛ cup Dijon mustard
-⅛ cup honey
-3 cloves garlic, minced
-1 tsp salt
-½ tsp freshly ground black pepper
Chicken Instructions:
1) Preheat the oven to 375 degrees
2) Pat chicken dry with paper towels
3) Season with salt and pepper, making sure to get under the skin as well
4) In a small bowl, mix together the dijon mustard, honey, garlic and olive oil.
5) Place the chicken in a small 8×8 baking dish, and cover with the honey mustard sauce.
6) Bake for about 45-50 minutes, or until the chicken is fully cooked to an internal temperature 175 degrees.
7) Broil on high for 2 minutes, if you want to brown the chicken more.
Smashed Potato Ingredients:
-1.5 lbs. little yellow potatoes, washed
-2 tbsp olive oil, divided
-2 garlic cloves, peeled and slightly smashed
-2 bay leaves
-2 tsp salt, divided
– tsp freshly ground black pepper
Smashed Potato Instructions:
1) Preheat the oven to 400 degrees
2) In a medium pot, cover potatoes with cold water (at least 1 inch above the tops of the potatoes).
3) Add 1 tsp salt, garlic clove and bay leaf to the pot and bring to a boil.
4) Once the water is boiling, lower to simmer, cover and cook for 10-15 minutes, or until you can easily put a fork in the potatoes.
5) Drain and place back in the pot and coat with 1 tbsp olive oil.
6) Spread them out on a baking sheet, at least 1 inch apart.
7) Using a large, heavy kitchen object (like a heavy glass measuring cup), gently smash down on the potatoes, so they are about ½ inch thick and you can see the insides.
8) Drizzle with 1 tbsp olive oil, then sprinkle with 1 tsp salt and ½ tsp pepper.
9) Bake for 30 minutes or until crispy and golden brown.
Brussels Sprouts Ingredients:
-1 lb Brussels sprouts
-1-2 tbsp olive oil
-1 tsp oregano
-½ tsp garlic powder
-1 tsp salt
-½ tsp freshly ground black pepper
Brussels Sprouts Instructions:
1) Preheat the oven to 400 degrees
2) Clean and halve the Brussels sprouts, pat dry
3) Place in a large mixing bowl, and mix with the olive oil, oregano, garlic powder, salt and pepper.
4) Place on a baking sheet, cut side down.
5) Roast for 20-25 minutes, until tender and cut sides are browned.

now we have to put them in the on the baking sheet oh the baking shees daddy will help you make sure to put the flat side down okay okay this is what Mommy means by flat side down like this this mhm so this is nice just put them all flat side down like this yeah like that try to spread them out a little bit what El you mean okay how much mustard same amount like 1 E of a cup the Brussels sprouts are in the oven and we’re making the honey mustard sauce the chicken okay here we go the honey mustard sauce is really easy and you probably already have the ingredients in your house it’s just honey mustard olive oil garlic and salt and pepper to have that take it drop it in there thank you then left one like this take a spoon Lo it in there I did it okay put the spoon back in please you just want to hold the bowl yeah now I’m going to get the chicken ready for baking I salt and pepper one side then I flip and do the same thing I try to get the salt and pepper underneath the skin as well then I place it in a baking dish now it’s time to brush on the honey mustard sauce and spread it out so it’s evenly coating each piece now we bake this for 45 to 50 minutes at 375 meanwhile our brussels sprouts are done they’re looking nicely browned they were in there for 25 minutes at 400 will you put the garlic in there Sophia oh garlic garlic garlic thank you and then the bay leaf put those leaves in there too watch your hand than you good job okay now I’m going to turn it on we’re boiling yellow baby potatoes to go with the chicken we’re going to bring them to a boil once they’re boiled I drain them put them back in the pot and add some olive oil to coat them we’re going to be making smashed potatoes with these let’s push down once the potatoes are cool enough to handle spread them out on a baking sheet and use a heavy kitchen object to smash them we’re using a glass measuring cup that’s really heavy it’s like bubble wrap is it relaxing mhm you want to do it with Daddy Sophia push push good job push okay now we’re going to drizzle drizzle with olive oil because we already coated the potatoes with oil you only need a light drizzle here that’s good no not too much that’s good that’s we can salt and pepper no you don’t do the pepper first no I do it you got to get the lid off take the lid off take it off for me please please can I take it off yes I want it there you go no I want I know you do yeah go yeah good job [Music] Sophia keep it over the tray come on shake it with me okay Shake okay three more high five we’re going to put them in the oven okay chicken’s done chicken is done yeah after 30 minutes in the oven at 400° the potatoes are looking great now it’s time to eat the skin oh you want the skin I want the skin please it’s good right left skin piece I left skin Okay so potatoes inside potatoes those are tatoes yeah potatoes put food in yeah you put food in the oven we put our food in the oven right and it gets really hot and then it Cooks you made good food in there do you want some more Sophia no they are so hot no they’re not too hot they’re good now they’re good they’re warm yeah they’re just warm they’re warm they taste good warm done you’re done I’m done did you try your potatoes we eat my potatoes I get orange aren’t they good orange insides they’re yellow they’re they’re yellow potatoes no they’re Orange orange okay try one there’s orange on top it tastes good it tastes good right you did a good job do you want some more chicken Sophia no I don’t have you already have more chicken but chicken this is yummy you
