2 cups vege stock
1 cup water
4 cups creamed corn
1 cup corn kernels
1 tsp sesame oil
2 shallots
coriander to serve
oil for frying

hi everyone and welcome to Nicko’s kitchens fast food Friday today we’re going to be making a really easy quick and best of all healthy dish and we’re gonna be making corn chowder he’s got budget meals Monday what you want Wednesday fast food Friday what else could he share it’s Nicko’s kitchen where satisfying meals so that’s the first thing that we’re gonna do is just add some olive oil to a large stockpot and to the pot I’m gonna add one large brown onion that I’ve just roughly chopped up cook the onion just until it goes soft it should take about two minutes now once they’ve softened up guys I’m going to add in some vegetable stock now if you want to use chicken stock go ahead but I do find vegetable stock works best for this dish and I’m also going to add in some water and of course I’m gonna add in some creamed corn also some corn kernels and of course the season with some salt and some pepper and just give it a good mix through now guys what I want you to do is bring it to the boil put it on high and bring this to the boil once it starts bubbling away on the top then turn the heat down it should take about four to five minutes so now that our corn chowder is bubbling away I’m gonna turn the heat down to a medium heat just give it a good stir now guys this is optional you don’t have to put this in but I find it gives it a really really awesome flavor and it just lifts the whole dish I’ve got some sesame oil and be very very light with it not too much but just a few drops in there and lastly I’ve got some shallots here now shots are a relatively onion family but there are a lot sweeter if you can’t find them you can leave them out just add little bit more of the brown onion that we did at the start now this stage guys if you wanted to being a chowder you could add some cooked bacon if you wanted to or even some cooked potatoes if you wanted to as well I’m not going to but there’s some variations you can do with this so just for another minute longer guys on a medium heat just until those she lights soften a little and then we’re gonna serve this bad boy up and just over the top guys I’m gonna finish it off with some more of those shallots and on the top I’m just gonna finish it off also with some fresh coriander and then you have a guy’s Nikko’s corn chowder it is absolutely sensational it is thick it is hearty it is healthy and it is fast oh let’s give this a go mmm that sesame oil really brings that alive it is sensational the sweetness of the shallots the crunchiness of those corn kernels the creaminess of the creamed corn that is awesome as always the ingredients are below so check it out please give this a go you will not be disappointed you guys take care and I’ll see you this Monday for budget meals until then take care [Music]

i made this for lunch yesterday coz i happend to pass by these ingredients in the cupboard and immediately i though" NICKOS KITCHEN" ..
and so i sat down and watched total recall and ate my soup
I am disappointed. Shallots are more mild and not necessarily sweet they still have quite a bite and as for the fresh coriander, why add it as a garnish when you didn't use it in the soup? And your description of the dish was preposterous. But A + for effort. If you want a great soup recipe for lentil soup, or pumpkin soup give me a call.

@beydounislam To be honest, canned corn is usually pretty good. If you want you can do it all fresh, but if you're going to sub cream corn go with another recipe possibly since the creamed corn isn't just straight partially pureed corn and has a bit more to it usually.

Is there anyway you can substitute creamed corn with something else? Because we don't have creamed corn in Denmark.

1] First if you want a creamed corn substitute,take half a can of corn,puree it in a blender or food processor and then add a bit of sugar and/or corn starch to flavor
2]usually soup which has a thickened milk or cream base added is called chowder

i live in holland and we don't have creamed corn
i have been looking for ages for a substitute
i have been looking for years for this stuff in holland and have never found it neither frozen but i did the blender thing with just plain tinned kernels for soup it turned out perfect
now we can eat corn chowder all the time
it was delish

This is nothing more than corn with onions. I'm not knocking this recipe, but corn chowder is made with cream corn, whole kernel corn, heavy cream, bacon, ham, potatoes, carrots, celery, garlic, onions and seasonings of thyme, rosemary, basil, salt, pepper and if you like a little heat, add some hot pepper seasonings of your choice. Just saying.
Corn and onion soup? Where is the cream and Parmesan cheese?
It’s a couple of cans of corn and some vegetable stock. This isn’t corn chowder.
Be careful I am from Maine which is Chowder country! 🙂
