Vegetarian crispy quesadillas

    The filling is a taco-seasoned mixture of TVP and French lentils (second time ever using TVP!). A little jack cheese on the inside and one side of the outside, inspired by that new Taco Bell thing. It was so good and stayed extra crispy! Sides of black beans & rice, sautéed broccoli/snow peas/zucchini and microwave-steamed corn.
