Quinoa, Roasted Beetroot, and Feta Salad

Ingredients:
• Quinoa
• Roasted beetroot, diced
• Crumbled feta cheese
• Cherry tomatoes, halved
• Mixed greens (spinach, arugula, or a combination)
• Radish, thinly sliced
• Cucumber, thinly sliced
• Extra virgin olive oil
• Lemon juice
• Honey
• Salt
• Lemon pepper

Instructions:
• Cook quinoa according to package instructions. Once cooked, let it cool to room temperature.
• In a large salad bowl, combine cooked quinoa, diced roasted beetroot, crumbled feta cheese, halved cherry tomatoes, mixed greens, thinly sliced radish, and thinly sliced cucumber.
• In a small bowl, whisk together extra virgin olive oil, lemon juice, honey, salt, and lemon pepper to make the dressing.
• Drizzle the dressing over the salad ingredients and toss gently to combine.
• Serve immediately or refrigerate until ready to serve.
