Top Level Sapporo Miso Ramen at Menya Saimi

    [Menya Saimi (麺屋 彩未) ](https://youtu.be/soHRJ9cxaJA)is serving some of the best miso ramen in Japan since the shop opened in 1993. The owner of Saimi has trained at the legendary Sumire in Sapporo, a heritage that can be felt in every sip and slurp. At times, Saimi even surpasses Sumire in the ramen rankings and it has taken the number 1 spot of best miso ramen in Japan many times in various rankings.

    If you ever had any Sumire or Junren related miso ramen, you will definitely get something familiar at Saimi. Heavy tonkotsu base broth is combined with a wok fried miso, lots of fragrant lard floating on top of the bowl. The noodles are lovely yellow and curly, with a great bite, the image of the noodles you would expect at a great Sapporo miso ramen place.
    What makes this bowl special is that it is a tad lighter than comparable bowls at Sumire and Junren, especially with the grated ginger that comes on top of the slices of chashu. Once you mix the ginger into the soup, it transforms into an almost light and fresh soup. A great flavor changer in the middle of the meal. I would suggest to wait with the mixing until you are maybe halfway done with your noodles.

    One more recommendation: Come early! Make sure to at least show up 15 to 20 minutes before the official opening time, so you are directly in the first batch of people that enter the shop. If you come a bit after opening, you will face a 1 to 2 hour wait, especially on the weekends.

    Menya Saimi is a must eat for everyone visiting Sapporo and for all ramen nerds who want to learn more about miso ramen. Hard recommendation, one of the best miso ramen shops out there.
