it’s one of my favorite and most memorable salads I ever made in cooking school specifically fatou now I don’t have it often because it does take a lot of prep but I’m partnering with athos’s feta to create a shortcut version that’ll only take you around 15 minutes you basically start off by chopping up a bunch of Roma and then into the bowl you’ll add torn mint and parsley now when it comes to how much I would recommend adding enough so that you could taste it but you really want to make sure that it’s not overbearing so basically a small handful of both herbs now to keep the dressing short and sweet I like to combine a generous amount of olive oil and then to that I’ll add a generous pinch of salt as well as the juice of half of a lemon and then like to add in one clove of grated garlic two cloves if I’m really in the mood for garlic and then optional if you have it add in a little bit of pomegranate molasses or honey or both and then just shake all of that up until it’s nicely emulsified and once your lettuce and herbs are dry enough you’ll throw it in your salad mixing bowl toss in that simple vinegarette and of course because salads need feta toss in a generous amount of athenos feta and then finally to finish things up toss in some store-bought P chips and then serve it up and I’m telling you it doesn’t have to be crazy complicated to be delicious
