    The rice puffs look like maggots. I’m unsure if there’s a way to avoid this…. Maybe be hype intentional about placing them laying down and aligned like tiles? 🤔

    seems a little detached, as in, overworking the garnish and forgetting the eating experience. if i ordered a steak and recieved this i would be disappointed. I think the garnishes would work better on a starter, but the heavy, intense ex-dairy steak makes the trimmings present appear a bit frilly

    The plate feels over-engineered and lacking at the same time.

    I like the concept, especially the sweet earthiness of cooked radish with the rich meaty flavor of dairy cow, contrasted by the pickled shiso. Great flavors, textures of puffed rice are smart too.

    It’s a great idea, but the steak does happen to looks like maggots on a brick. And the radishes are over-garnished *(in comparison to the steak) and too far away from the steak.

    I like what another commenter said, it feels “detached”.

    I’d suggest tying them together somehow. Maybe slicing the steak and fanning, with the rice puffs and drizzle creating a bridge between the two. I’d also suggest dusting the rice crisps with a green powder, you can do so with a shiso powder to keep consistency.
