INGREDIENTS
Olive oil
1 onion
420ml (1 3/4 cups) of tomato sauce
Dry oregano
Salt
Pepper
1 zucchini
1 eggplant
1 potato
2 tomatoes
2 bell peppers
1 leek

For brushing:
Olive oil
Dry oregano

METHOD
1. In a pan, sauté the onion with some oil. When it’s golden, add the tomato puree.
2. Season with salt and pepper and add oregano, then let it cook for 10 minutes.
3. Now all you have to do is cut the zucchini, eggplants, potatoes into rounds, and the bell peppers into pieces the same size as the other vegetables.
4. Now start assembling the ratatouille. Place the rounds on top of each other, alternating the vegetables. You should get small stacks.
5. In a baking dish, create a base of sauce and arrange the compacted vegetable stacks next to each other in a circular pattern until you reach the center.
6. Separately, mix together oil and oregano, and use it to brush the vegetables.
7. Add a pinch of salt and bake at 180°C (356°F) for 45 minutes.
