    ** Servings: 2-3**

    *Ingredients:*

    – 1 cup Sprouts (Moth Beans)
    – 2 cup Farsan/Namkeen
    – 3-4 cup Murmura/Puffed Rice
    – 4-5 tbsp Lemon Juice
    – 1 small Onion, finely chopped
    – 3-4 Indian Green Chilies, finely chopped
    – 1/2 tsp Turmeric Powder
    – 1 tsp Red Chili Powder
    – Salt, to taste
    – Chaat masala – 1 tbsp
    – Onion garlic masala (kanda lasun masala) – 1 tbsp
    – Chopped Coriander Leaves, for garnish
    – Salted Peanuts, for garnish

    *Instructions:*

    1. Heat a pan add the sprouted moth beans along with just enough water to cook them. Also add a pinch of turmeric powder and salt to taste. Turn off the heat once tender.
    2. Heat another pan and add 3 tablespoons Oil and immediately add 1 tsp red chili powder and 1/2 turmeric powder and salt and give a mix. Immediately add the murmura i.e. puffed rice and roast it until its crunchy.
    3. In a large bowl, mix together sprouts, farsan, and murmura.
    4. Mix together lemon juice, onion, green chilies, chopped coriander leaves, chaat masala and kanda lasun masala.
    5. Taste and add more salt, lemon juice or chaat masala if required.
    6. Garnish with and salted peanuts.
    7. Serve immediately and enjoy!

    *Tips:*

    – You can adjust the amount of chili powder and lemon juice to your taste.
    – Add the peanuts just before serving to maintain crunchiness.
    – You can also add other ingredients like diced tomatoes or potatoes to the bhel for added flavor and texture.

    *Note:* This recipe is a variation of the traditional Matki Bhel recipe, using sprouts and farsan to give it a unique twist. Feel free to experiment and adjust the ingredients to your liking!
