Italian Maritozzi: Sweet Buns with Whipped cream

Maritozzi are delightful Italian sweet buns that originated in Rome. These fluffy brioche-style rolls are filled with homemade whipped cream and dusted with confectioners’ sugar. They’re the epitome of simple yet sublime: the two components — a soft, sweet bun and freshly whipped cream — join forces to create a treat that’s light, decadent, rich, but not overly sweet. Imagine biting into one of these delightful buns as a breakfast or an afternoon pick-me-up, perhaps accompanied by your favorite espresso. 😊

Here’s a basic recipe for making maritozzi:

Maritozzi Recipe
Ingredients:
500g all-purpose flour
10g salt
50g sugar
10g active dry yeast
250ml whole milk
2 large eggs
100g unsalted butter, softened
Whipped cream (for filling)
Confectioners’ sugar (for dusting)
Instructions:
In a stand mixer fitted with the dough hook, mix together all the ingredients except the butter. Mix and knead until a smooth, stretchy dough forms that cleans the sides of the bowl.
Add the softened butter one piece at a time, mixing to incorporate fully before adding the next piece. Knead the dough until it forms a soft, smooth ball.
Form the dough into a ball, place it in a greased bowl, cover, and let it rise for 1 hour at room temperature. Then refrigerate the dough for several hours or overnight.
Turn the chilled dough out onto a work surface and divide it into 12 pieces (about 60g to 65g each). Shape each piece into a tight ball.
Evenly space the buns across two greased or parchment-lined baking sheets, cover lightly, and let them rise for 2 1/2 to 3 hours, until doubled and puffy.
Preheat the oven to 375°F (190°C). Gently brush the risen buns with an egg wash for extra shine and color, if desired.
Bake the buns for 15 to 20 minutes (tent after 10 minutes if they’re browning too quickly), until golden-brown and well-risen.
Let the baked buns stand for 5 minutes, then turn them out onto a rack to cool completely.
Once cooled, slice each bun in half horizontally and generously fill with whipped cream.
Dust the tops with confectioners’ sugar and enjoy!
