1.) For the Greek salad, I used some basic easy salad leaves from a bag for maximum ease (although an authentic Greek salad doesn’t use lettuce). I added spring onion, cucumber, tomato, kalamata & green olives, with plenty of feta!

2.) My sister sent me her tzatziki recipe which I followed pretty casually haha:

– Greek yoghurt
– 1 cucumber
– Dried/fresh dill
– Squeeze of lemon
– 1 garlic clove
– Salt/pepper

First slice the cucumber in half lengthways and using a spoon take out the seeds and discard

Grate it! Pour lots of salt over and allow to drain in a sieve over a bowl. Squeeze the remaining moisture out. (The salt draws out the moisture)

Add greek yogurt, pureéd garlic, dill and lemon. Season to taste. Enjoy!

3.) For the chicken, I used boneless thighs and once chopped into vaguely similar sized chunks, on went some:

– Greek yogurt
– Mixed herbs
– Greek seasoning mix
– Juice of a whole lemon
– Two large cloves of garlic
– Drizzle of olive oil
– Salt & pep.

Serve with pita bread & sizzling hot salty chips! Delicious in a wrap. Let me know if you tried 🙂
