This is one of the dishes I served to friends at dinner 2 days ago, one of the most appreciated of the whole dinner: sautéed porcini mushrooms, but in my own way.

Seared and noodled porcini mushroom with mountain pasture butter, Maldon flakes, porcini mayo, porcini mushroom stock, yarrow, sorrel and parsley powder, cocoa tuile. A vegetarian dish, yet with such an intense flavor that it recalls a real traditional second course.

What do you say, can you help me find a name for him? What would you call this dish? 😉
