Written Recipe:

Biscuits:
1 cup pork panko
4 large eggs
2 tablespoons salted butter, melted but not hot

Gravy:
1 tablespoon tallow, for the pan
1 pound bulk breakfast sausage
1 cup heavy cream
4 ounces (½ cup) cream cheese

1. For the biscuits: Preheat the oven to 400°F.
2. Put the panko, eggs, and butter in a large bowl and mix well with a fork.
3. Fill 6 wells of a standard-size 12-well silicone muffin pan about three-quarters full with the batter.
4. Bake for 18 to 20 minutes, until the biscuits are cooked through and browned. While the biscuits are in the oven, make the gravy.
5. For the gravy: Preheat a large skillet over medium-high heat. When hot, drop in the tallow and add the sausage. Cook, stirring to break it apart, until the sausage is cooked through and browned, 8 to 10 minutes. Drain all but 1 tablespoon of the fat.
6. Pour in the cream and add the cream cheese. Stir well and continue to cook for 3 to 4 minutes to warm and thicken the gravy.
7. Split the biscuits in half and serve topped with the gravy.

hey everyone it’s Courtney welcome back to my Channel today we are going to make a brand new recipe from my upcoming book I know this is backwards for you um we are making carnivore biscuits and gravy so I actually just made this at ketocon hacky health I did a cooking demo um in Austin Texas and this is the first time I was putting this recipe out into the wild and it was very well received and some people have already like made it and they’re tagging me and it’s just it’s so awesome so it is time to share it with the rest of you so if that sounds absolutely delicious give this video a thumbs up and make sure you are subscribed and we’re going to Dive Right In I will also put the recipe in the description box so that way you can have it all written out it serves six because there are six biscuits of course you can eat more or less I won’t judge you if you eat the whole thing we’re going to start off making the biscuits and while those are baking we are going to get our gravy ready first we’re going to start off with our pork Pinko now I buy this on Amazon Walmart also has it um because I blow through it you can of course get a bag of pork grinds and grind it up yourself but this is so convenient but first i’m going to melt the butter two tablespoons of butter and then I’m going to add the Pinko to that one cup and then four eggs I don’t even know what just happened why did I just whip this out of the microwave so I’m gonna change my shirt and I’m G to add a little bit more butter to this oh my gosh like and guys I say this every time but literally like there’s something always that I mess up um in all my videos so amazing let’s get back to this okay I’m going to add a little bit more butter to this let’s try this again very gently take out your bowl of melted butter and to that we are going to add one cup of pork Pinko Loosely poured in here do not pack it in like brown sugar and then four eggs we’re going to mix this up and we are going to put it in our muffin pan I do um silicone makes it easier to pop it out and we’re going to bake it at 400 de for about 18 to 20 minutes the oven works great or I’m actually going to use the bake setting on my air fryer and if you’re using silicone make sure you put it on some sort of metal tray so it’s not all flimsy and we’re going to fill six probably should use a spoon but we’ll just do this so we’re going to pop these in and start our gravy so we’re going to get our pan hot I use cast iron going to do medium high heat and once that gets hot I’m going to add a little bit like a tablespoon of Tallow in there or you can use bacon grease I actually have some right here so I’m going to add that in and just use the rest of that measure out a cup of cream oh look at that chunk coming out yummy also 4 o of cream cheese so this is I think seven ounces so we’ll just do a little bit more than half didn’t know there would be math involved all right so the pan is hot we’re going to add our pound of breakfast sausage into it let’s see if I can do this without touching it oh my gosh yeah melt the plastic that’s good this is going great good thing I didn’t do all this at my cooking demo huh which I guess less people saw that than are going to be seeing this so so we’re going to get this cooked up and I don’t use any salt in this recipe uh the sausage is typically seasoned well enough the pork Pinko is salty I use salted butter so obviously add some if you need it but I would wait till the end to taste everything because it’s typically even could be slightly on the salty side and I love salt as it’s cooking you just want to break it up into small pieces and if you have an excess of fat I would drain some if it’s more than like a tablespoon or so but mine doesn’t seem to have very much so once this is cooked through we’re going to add the cream and the cream cheese and we’re just going to let it simmer a little bit till it’s nice and thick probably simmer for about 3 to four minutes okay smells and looks delicious so be sure to like scrape up any bits now we’re going to add in the good stuff pour in the heavy cream and then add the cream cheese go gosh and just mix it up real good okay so this is what it looks like when it’s all just getting melted into there so we’re going to let it do its thing for about three to four minutes it’s going to simmer and get thick and by the time that’s ready the biscuits will be ready all right nice and thick couple minutes left till the biscuits are ready and I just want to say if you have ordered my cookbook already if you   4. Recipe looks so good but I do the egg yolks with butter and baking soda, bake in muffin tins on 350 for 5 minutes. Then I cook hamburger and do the sauce and pour over biscuits. I don’t eat pork

  7. As a Texan, biscuits and gravy are ubiquitous and not negotiable, I must have it. But since being carnivore, I haven't had this delight for 2 years. Carnivore biscuits are difficult but not Impossible. So I'm looking forward to seeing this. NO STYROFOAM, Please.

  9. Are you kidding me?! I would be a hot mess & BEYOND if I was cooking for a camera/phone/crowd/whatever, sheesh. No way. Just came in from flipping meat on the flat top, managed to splatter my bare legs w/flaming hot pork fat not once, but TWICE- errrgggh. It's a constant fiasco, I swear. I'm a good cook & I love to do it~ but it's dangerous, dang!
    Recipe looks/sounds YUM, have made something similar, but not quite the same so I'll be trying this. Thx for sharing the love~ in advance!

  10. I think it just "looks" like you mess up more because most have all their ingredients ready, whereas you do everything as you go along. ie: sausage out of the plastic. You make it so much more fun to watch😂
