    I’m not sure how I feel about the oil/sauce swirl other than it looks insane. It looks like a Doppler radar of a hurricane. It’s uncanny, like some lovecraftian creature is going to emerge. At first I thought it was the cross section of an artichoke.

    I love this. Maybe a diagonal cut on the salmon would make it more in congress with the other elements visually. I dig on the tie die swirl it works here.

    I like this a lot, a great elevation on what would usually be a simple dish. My critique would be to present the salmon skin side up and at a 45 degree angle to show off the sear.

    Otherwise, spot on. I’d smash the fuck out of this.
