    Canyon Bakehouse 7-grain GF bread (if you get it in the day-old bargain bin it is just as delicious because you are toasting it, anyway)

    one slice Trader Joe’s Dutch Sliced Goat’s Milk Cheese (being already sliced in grilled cheese format is such a *luxury*)

    Meyenberg goat’s milk butter to grill with salt, garlic powder and some Murray’s Pecorino Romano grated sheep cheese on outside

    handful of chopped onion inside, left over from night before

    grilled in cast-iron pan on medium low under lid

    *i cannot have gluten and i cannot have cow dairy but discovered after a few years that goat and sheep dairy is fine (go figure.) Goat cheese is kind of pricey but i get the least expensive ($15 a pound or less) and then use the romano and spices to mix it up.. i just want the melt and the basic cheesiness) Since it is goat’s cheese it is high quality anyway so buying the cheapest is not a problem)*
