Looks nice, sounds nice. Maybe needs a couple of tiny roasted carrots too? To plate I would put the cabbage on first, drizzle the orangey looking sauce in a big zigzag over the cabbage and the other half of the plate, then put your pork on (after sprinkling sesame seeds on it to the side somewhere to prevent errant seeds on the plate)

I feel like you need a much larger plate for this composition to work, and also to be easy to eat

It sounds great but there is too much going on on top of the pork neck. I like the green and white but maybe use really long slender diagonal cuts of the green onions, alternating with small stripes of sesame seeds, or something like that. I can’t really see the pork past that.
