    Would love feedback! Definitely trying to get better at delicate plating, and my first time trying this ring style. Idea was a light summer salad.

    Quickly seared the mackerel (should have torched it for better color…). Sweet potato was tossed in oil, garlic, salt, and roast. Cauliflower was par boiled then tossed in spices and broiled. Snap peas look dry in the pic but were tossed in a touch of yuzu and salt. Cucumber was a quick pickle, with black pepper and Thai Chile for some kick and contrast. I’m sad that there is also an onion soubise, I put a healthy ring down and plated the rest on top, but it got lost in there!

    Visually I like the style. At first I thought this can’t be an entree then after I read your comment I changed my opinion. I agree, things look dry in the picture, and that sauce maybe better placed in the middle, but it’s hard to tell without trying it and seeing the color. The sear on the fish needs more like you mentioned. Overall, nicely done! I would be happy to get this as a salad.

    Looks great, maybe a nice tar tar sauce on the plate. Might be dry
