we got the corn brief biscuit going to do it on the Big Green Egg I rinsed it pretty good but um it was still a little salty cuz I didn’t soak it in any kind of water uh I just put pepper and garlic on the outside and then I crushed up the uh packet that was in there topped it with that packet using hickory just cuz I like the smell reminds me of home I try to keep that thing uh below 300 but my my big green egg is pretty old and you know it’s got some some air leaks so it always winds the way like creeping its way towards uh 300 which is fine you’ll see here it started around 230 but like I say it it creeped its way up so I got it on around 11:50 and then I pulled it at 5: p.m. about 5 hours and and I pulled it a little early I wanted it to cook to 20 about 202 205 something like that and uh we got a little hungry so I pulled it at 5:00 and it was at 190 something uh 195 here’s that sauce my wife made here’s the only difference we did not use the uh minced onion we love onion but we just chose to leave it out and instead of deal Pickle we did a sweet [Music] [Music] relish so like I said all I put on the outside of this corn beef was H garlic and and very heavy on the black pepper uh I rinsed it really well but I didn’t like soak it in water the night before or nothing like that and it came out pretty salty uh not too salty but it was on the edge if you didn’t rinse it it’d definitely be too salty but it came out really good so my wife wanted uh swiss cheese and then I went pro alone but this is a this is the Swiss cheese sandwich that we made it came out delicious [Music]
