Are you ok? The spelling was concerning 🤣.
I like your flavors but something about this plate is really unsettling. The berries look old, the micro greens are not necessary and wilted, it’s very beige in the middle. I think this plating needs a full redesign. The coulis is confusing in it’s plating (three different methods).
Try a different mold, use brighter berries or don’t cut them like that, axe the microgreens, and please choose one kind of tuile style. The short bread cookie on the bottom could be cut and artfully placed like shards.
I know you put in a lot of effort into this, it’s got good bones.
