    Maybe some kind of pretty powder on the beets?? You can dry and powder almost ANYTHING!

    Once had dried dragonfruit powder on beets and the contrast was 😍

    Looks absolutely beautiful my only concern would be the lack of texture in this dish. The tuile is the only real texture and it’s probably not enough, maybe some toasted pistachios worked in there somewhere?
