  1. Oh no. What is this??? This isn't carbonara. The only main ingredients are guanciale, egg yolks, spices, parmigiano, oil and spaghetti. Call it by other names. This isn't carbonara at all.

  2. Wow, thank you so much for this authentic Italian recipe. I. made this to my grandmother and she took her own life 🙁 . Oh well, it tasted fantastic, and I inherited tons of her stuff, so no problem. Grazie Mille!

  3. 1. Prepare a pot of boiling water
    2. Place the spaghetti pasta in the pot
    3. Let it cook for 5-10 mins or until al dente
    4. Stir the pasta to evenly cook
    5. Strain the pasta but do not throw away the pasta water we will use that later
    6. In another pan, put some oil and let it heat up
    7. Saute the onions
    8. Add garlic
    9. Once light browned, add ham
    10. Mix and fry ham for a few minutes
    11. After 2 minutes, add sliced mushrooms. Mix and saute for another 2-4 mins
    12. Pour the whole can of evaporated milk
    13. Mix and let it simmer
    14. Next add all purpose cream. Then add 1 cup of pasta water
    15. Mix again and simmer on medium heat until it thickens
    16. Add 1/4 teaspoon of ground black pepper. Mix. Add the desired amount of salt
    17. (Optional) Add a pinch of rosemary leaves
    18. Continue to mix until it simmers (5mins)
    19. Give it a taste
    20. Put pasta
    21. Turn off the stove and mix
    22. Add grated cheese and mix until it melts
