hello and welcome back we are going to do another menu this week that is all about low effort low heat meals because let me tell you I am over in Alabama this week over at my in-laws with my kids and it is so unbelievably hot the humidity some days is up in like 94% it’s crazy my hair’s all blah so this is the perfect time to do to continue our trend of doing meals that don’t require an oven and that’s simply because we don’t want to heat up this house anymore than we have to and because when you heat up that house the AC’s got to struggle to keep up with it and then you’re spending more money so let’s just not put more heat in our kitchen so this week six dinners under $60 let’s look at our menu okay here’s a list of all the recipes that we’re going to do this week and don’t forget down in the description there’s a link to my website you’ll you can see all of the The Stills the photos and then at the very bottom you can actually print your own PDF at home put it in your recipe binder or your meal planning binder and then there’s also a link directly to Walmart where you can see my favorites list which has every item on the shopping list and you can go through and don’t forget to change your zip code and then you can see exactly what the cost would be in your area so simple you don’t even have to plug in the whole shopping list yourself now we came out out really close to the budget our total was $59.80 but take a look especially at the pantry section because there was a lot of condiments that you probably already have things like hot sauce barbecue sauce ketchup mustard all of those things the only things that we’re assuming that you have this week is the same old you know whatever your preferred cooking oil is um what your favorite seasonings are and then you on one dish you will need either some flour or some corn starch you can use either one so just make sure that you have one of those now we did shop this week I’m hoping I’m pronouncing this correctly and it’s Lehi Utah and so when you go and check yours make sure that you check your pantry and your free your fridge and your freezer because odds are good you already have some of these items so your total will just easily be way less than mine I’m sure you’ve seen before where they have the cracked chicken and it’s made in a slow cooker but this time we’re going to do it on sandwiches personally I like to toast the Buns because then I can just kind of pile the chicken on top you can also kind of make this sandwich your own maybe you add some lettuce or tomato or however you like it and we’re going to do some easy pan fried potatoes on the stove top and then we’ll do some corn I usually just microwave it and then I can add some seasonings at the very little I usually add a little butter just to give it a little bit more flavor but that’s up to you our second meal is a zucchini and sausage pasta one pot meal and technically this isn’t really a one pot meal but it’s all going to end up in one pot but really when you look at this you’ll notice that this is going to end up being like a chili that is kind of beefed up with the zucchini and then we’re going to add pasta to it to where it’s all together in one pot now I use chili ready Tomatoes which means it already has that chili seasoning in it so if you don’t have those or maybe you already have some diced tomatoes in your cabinet you can just easily add some chili powder to make that the same taste but really we’re going for a nice chili flavor with vegetables and with pasta and then even my kids they kind of like to if we have some fros or some tortilla chips we’ll kind of crunch those on top and top them with a little cheese so that’s up to you we also usually add some sour cream on top just however you normally would eat your chili you can do the same thing here you may have noticed that we are getting into peach season where your local grocery store is typically going to have a couple different variety of peaches and they’re fairly inexpensive so we’re going to do a peach and cucumber salsa and part of that salsa is going to be mint and it’s going to be orange marmalade now I prefer to use fresh mint and mint is usually one of the herbs that I grow at my house but you can usually pick it up pretty inexpensive and then you’re not going to need a whole pack of mint and this is one of those that you could easily chop up and then you can freeze it for later I’ve actually left it whole and froze it for later and then just kind of defrost it and used it later so either way is fine and I like rice bowls I just love those and so I usually do this rice bowl style where you know I take my bowl and I have my rice at the bottom my chicken and then I top it with the salsa but you can also serve it you know kind of side by side whichever way and this um the peach cucumber salsa if you have any left over it’s actually really good with like a nice salty tortilla chip so just to let you know okay the next meal is going to be cheeseburger quesadillas this is kind of a Twist on a classic because I love a good cheeseburger and I’m sure you guys do too and the kicker here is that when we cook our meat we’re going to use ground turkey today just because it was a little bit cheaper but you can also use ground pork or ground beef or whatever you like and once we cook it and we kind of drain off that excess grease we’re going to throw in our condiments that could be your ketchup your mustard and we’re going to mix it all together and then honestly sometimes I like to go ahead and add in some fresh cut pickle and just kind of mix that in as well and then I know there’s kind of a divide about how to make quesadillas I’m one of those that I like to use a big tortilla and I fill half of it and then I fold it over and then we usually do it either in a pan with just a little bit of oil we do the George Foreman or the flat top just get that nice crispy crunch but you can also do it where you do the tortilla at the bottom you fill the whole top and then you put another tortilla on top and then do it I just find that it’s harder to flip them that way so if you going to do something to where it could crisp both sides so it’s totally up to you which way you prefer and then we’re just going to do some easy homemade fries and the air fryer and then um a of green beans and you can kind of season those up how you like um we usually do very simple because my kids just aren’t at the point where they like their vegetables to be super seasoned but that’s up to you so let’s go on to the next one now since we use that orange marmalade in another recipe it just made sense to do orange chicken this is kind of a copycat of like a takeout orange chicken and this is the one dish where you will need either flour or corn starch either one will work totally fine you’re just going to dredge your chicken breast in the flour the corn starch and then um you don’t need a ton of oil on the pan but you do need a little bit more than just um like if you were going to saut vegetables and it’s going to give that chicken like that nice crispy crunch to it and then we’re going to make that sauce and I actually like to do it in the microwave and when I do that I put it in a microwave bowl and then I put a paper towel over top so it doesn’t you know bubble over you know splatter and and I just mix my chicken with the sauce but I know some people like to mix it with their vegetable as well totally up to you again I do this rice bowl style to where we put the rice on the bottom the chicken and the sauce and then the broccoli on top you can do that however you like this is just a really simple easy dinner that is so tasty and everybody always asks for more our last meal this week is going to be a sweet kale pasta salad and this is part salad part pasta salad and I’m sure you’ve seen before well and I think we’ve done it before where we take like a big family-sized pack of Caesar salad like the Caesar salad kit with the dressing and then we mix it with cooked pasta and then that way you know it just comes together really nicely this is kind of that same concept except we’re going to use a family siiz kale um pack and I think it has usually like dried cranberries sometimes they have nuts or seeds in them and then I usually try to beef it up a little bit with some bacon and some grape Tomatoes we’ll probably have a couple hamburger buns left over so we can easily make just a nice simple garlic bread or a cheesy bread to go with this and besides the boiling the pasta which only takes you know 10 15 minutes this is pretty much low effort at its finest and pretty low heat as well and because we’re going to chill that pasta you could easily go ahead and make it ahead of time maybe early in the morning when it’s not so hot and then you can just put everything together kale is very similar to cabbage where sometimes when you make KLA it kind of breaks down the toughness so if you want to make this ahead of time you easily could that’s up to you I wouldn’t pre-make this ahead of time if you’re going to use like a Caesar salad kit just because then your lettuce might get a little gummy and I just want to remind you that these are all great bases these are recipes that are just kind of strip down to basic simple forms and you can easily substitute out different items I would recommend that you check and see what you already have in your fridge your freezer and your pantry and use what you have so if you don’t have bowai pasta that’s totally fine you can use shells you can use um elbows I wouldn’t re recommend using like a spaghetti or a Linguini just because we we need some type of shape there but don’t go out and specifically buy pasta in a specific shape just use what you have or just pick your preferred shape and a lot of these other ones you can easily substitute out if you don’t like certain items you can easily swap them for something else uh there’s a lot of options here where if you don’t like regular potatoes or you’re trying to go low carb you could switch them out for sweet potatoes if you’re trying to um eat in a certain Manner and you eat brown rice you could easily swap out white rice for brown rice so there’s lots of options here so don’t feel like you have to make these exactly how I have them I want you to look at them as like formulas and you’re going to adjust them for your family’s needs so any who don’t forget we’re on Facebook we’re over there all the time we respond to Another great week of meals! Your family and mine have been eating the same things for weeks! lol No complaints, except they ALL hate broccoli. So Ive had to sub that out in some dishes. Im really looking forward to the orange chicken this week. yummy. Will probably just make some fresh green beans with garlic butter on the side and call it a day. Thank you so much!
