Beautiful plate and I’m stealing your idea for stacking the prosciutto.
My only critique a suggestion to blot the scallop before plating. That bit of moisture at the base catches the light and may discolor the sauce if it has to sit for a few minutes.
That’s insanely minor though.

Omg!! I have gotten my scallops like that one time and it made me so happy. This looks amazing.
Although.. does anybody actually like regular prosciutto that isn’t like crispy? I just feel like it’s so stringy and chewy.

I feel like a borage flower would set this off, just a tiny bit of purple to play with that vibrant green and sear. Love the simplicity, beautiful plate
