For how delicate and thought out the cream with the oil is I’d expect the tart to be a little more pristine too. The shell would look better if done in a ring mold and the filling be a lot more smooth on top/cut cleanly. Also the plate itself is very hometown buffet 😅 Always excited to see what you have to post on here btw!

One thing that instantly makes a tart shell look cleaner is lightly grating the very top with a microplane (blade held parallel to the bottom of the shell, idk if I’m clear) to get it straight and even. Also quickly running a blowtorch over the top of your filling before leaving it to set usually ensures a smooth surface. Finally, I recommend heating up your knife and wiping the blade as you cut into the tart, to get nearer slices. Your tart looks good, these are just little tips I generally find helpful:)

I love it! I feel like this would be perfect at a UFO themed restaurant. All that’s missing is a little alien figurine made out of candy or something.
