Ginseng is believed by the Chinese to brighten the eyes, enlighten the mind and increase wisdom. Western medicine will only concede the eye part, although a cup of ginseng tea when you’re feeling low can be so restorative that you might believe the East is on to something.

Ingredients

  • 1 ounce whole dried ginseng root
  • ounce whole licorice root
  • ounce fresh ginger root, plus more for garnish if desired

    Six half-cup servings

    Preparation

    1. Put the ginseng and 8 cups water in a saucepan over medium heat. Bring to a boil, reduce to simmer and simmer for 1 hour. Add the licorice root and ginger root and 2 more cups cold water. Bring the tea to a boil again, reduce heat and simmer for 30 minutes and strain. Serve in 4-ounce cups garnished with an additional slice of peeled ginger root for aroma.
