


For the butter:
1 stick of Butter
4 TBS Brown sugar
2 TBS Maple syrup
6 TBS Bourbon
10 Cloves Garlic
6 Chipotles with adobo
Soften the butter. Dissolve the sugar in the Bourbon. Microplane the garlic, chop the Chipotle and dump it all into the melted butter in a mixing bowl with the Maple syrup. Beat it all together until the bourbon fuses with the butter. Or… Use a processor if you want.
I like to empty onto parchment paper and roll into a log and refrigerate. It makes it easy to slice into pats to top the oysters.
Drop a few morsels of finely chopped, cooked bacon onto each oyster. Top with a pat of the butter and finish with some green onion.
Traeger at 500* for 10-15 mins depending on the size of oysters and desired doneness.
And while I prefer to shop elsewhere…. WholeFoods offers 1$ oysters on Fridays. If you call ‘em’ early in the day they will even shock them for ya.
