

Smoke the tritip for 1 1/2 hour until it reached 130F and finished it on the grill searing it 5 minutes each side, smoked the back ribs for 5 hours until I got it tender or 200F. Made a chimichuri sauce blend half of the ingredients on the vitamix and the other half finely chop and combine both to achieve full flavor and texture.
