Cooked about a 2 to 3 lb filet today. Cooked at 225 for an hour and 15 minutes. Pulled when temperature was between 140 and 150°. Also use a smoke tube.

One piece was basted in sweet soy sauce and topped with some JO seasoning and some lemon pepper. The other piece was just seasoned with the gospel rub. Both pieces were in the refrigerator for about 20 some hours. I did put olive oil on the bottom side so it wouldn't stick to the grill grates.

Came out really good and flaky. And plenty left over for a couple more meals. Going to be doing a tri-tip tomorrow and then we're going to have some Surf and turf.
