Our mid-week dinner is Smoked Meatloaf | Garlic Roasted Mashed Potatoes. Comfort food at its finest. This tender and juicy meatloaf and these garlicky mashed potatoes really hit the spot!

MEATLOAF Ingredients
2 lbs ground beef
1 medium onion diced
4 oz chopped mushrooms and bell peppers (optional)
1 stalk celery diced
4 cloves garlic minced
2 eggs
.5 cups grated cheddar cheese
3 tbls ketchup
3 tbls chopped parsley
.75 cups plain breadcrumbs
1/3 cups whole milk
2 tsp Italian seasoning
2 tsp Worcestershire
2 tsp salt and pepper
SautΓ© mushrooms, onions, bell pepper, celery, garlic, Italian seasoning, salt and pepper for 10 mins and let cool.
Mix beef, breadcrumbs, ketchup, eggs, cheese, parsley, milk, and Worcestershire. Add cooled vegetable mixture and combine. Shape into a loaf.
Place on grill or oven pre-heated to 325 and cook until 160 degrees. Time will vary based on size of loaf. (approximately 1.5-2 hours)
GLAZE
.75 cup ketchup
2.5 tlbs brown sugar
1.5 tsp vinegar
1tsp garlic and onion powder
Salt and pepper
Start glazing loaf when it reaches about 140 degrees.
Roasted Garlic Mashed Potatoes
2lbs Potatoes of choice
1 whole head of garlic
Olive oil (optional)
5 tlbs salted butter
.75 cup heavy cream
Salt and pepper
Chives and additional melted butter (garnish)
Remove quarter top of garlic head and coat with olive oil. Wrap in foil and place in 325 degree pre-heated grill or oven for 45-60 minutes. Mashed when finished and cooled.
Cover potatoes with olive oil and salt and place in 325 degree pre-heated grill or oven until potatoes reach 210 degrees. Approximately 1.5 hours based on size. Peel and mash when cool enough to handle.
Heat 5 tlbs butter, .75 cups of heavy cream, salt, pepper and roasted garlic. Pour over mashed potatoes and check for salt. Garnish with chives or parsley and melted butter.
