If I’m doing skewers I’m just gonna do them on my Weber kettle for better direct heat. Just do a two zone fire and bring up a little slowly on the safe side and then finish them right over the coals to get the nice char on them.

I’d rock them at like 200 for 20 mins. Pull them and bring temp to 375. Finish them off with higher heat. Pull beef at 125 and chicken at 165.

I would say the 0-400 trick should also work here. Possibly around 40 mins for thighs and about 25-30 for breasts. Depending also on how big your cuts are. Of course you gotta keep an eye on it make sure it doesn’t dry up.
