Smoked at 200 with super smoke on the IronWood XL. Wrapped it once I felt like the bark looked good. Bumped the temp up to 250. Let it ride till 203 internal.

I don’t say this often but that looks over smoked. Yes, it can happen and can taste like charcoal. There’s a fine line between smoke and coal
